Eat your greens! You can probably hear your mother’s voice in your head every time you hear that phrase. And you know she is right. Eating as many fresh vegetables as possible can really help our health but sometimes we get stumped on new ways of preparing them. With summer fast approaching we enter a time of abundance – food is fresh and readily available. We can enjoy heaps of fresh greens salads and juicy tomatoes and fire up the gas grill and charcoal barbeques and grill some fresh fish with a side of roasted corn on the cob. So many of the things we make in the kitchen can be made outdoors too on your gas grill. It is easy, fun, and healthy to experiment with grilling vegetables for dinner. You can make also use a grill pan to achieve a similar effect during the winter.
Some vegetables that grill beautifully are asparagus, eggplant, zucchini, cauliflower, Roma tomatoes and mushrooms, carrots and romaine lettuce. The trick to getting your vegetables to grill nicely is that they have to be fresh. Make sure you get local produce- that will guarantee the freshness and try to buy from a local far or farmers market. If you want to make a starchy vegetable to go along with your other vegetables boil or bake some nugget potatoes until tender but not soft, and bring out your iron skillet and make some low fat home fries on you grill with a bit of butter, onions and the potatoes. Get yourself a nice piece of salmon and you have an amazing and healthy meal.
A glaze that works well for salmon and asparagus about a pound of each
1/3 cup Dijon mustard
1/3-cup olive oil
1/3-cup honey
1/4-tablespoon balsamic vinegar
2 tablespoon of fresh dill chopped
Salt and pepper
Mix well and apply to vegetables and fish or chicken before baking or grilling.
